Recipe Thursday: Orange Lemon Chicken Wraps

Orange Lemon Chicken Wraps
Ingredients:
4 chicken breasts
6 slices of bacon
1 cup brown sugar
fresh parsley
tortillas

orange and lemon zest
lettuce (or spinach)

Marinade chicken breasts in vegetable oil, brown sugar, and the zest of the orange and lemon. Set aside.
Chop the lettuce or spinach, shred the carrots, and chop the onion. Set aside.
Cook the bacon, either in the oven or microwave. When you are done, remove the bacon and place on a paper towel. Set aside.

Preheat your grill or stove top pan to med-hi. Grill chicken.
Set your chicken in the oven, covered, and drop the temp. down to 150 to keep them warm. Place your tortillas in the oven, foiled as well.
OPTIONAL:
Cube/slice/dice your potato, I prefer small cubes for a quicker cook time and even doneness. Preheat a small fry pan to medium and fill with a shallow amount of oil (a deep fryer would be ideal). Cook until brown, drain, set aside.
Remove your chicken and cube, adding salad mix to tortillas. Toss with dressing, I prefer wasabi mayo (1/4 cup mayo and one teaspoon of wasabi powder), sprinkle chicken, crumble bacon, and add potatoes. Garnish with parsley, wrap, and eat!
